How do you follow a conductor while playing an instrument?

i was just looking at a few clical videos and i noticed a very energetic composer. i sort of look as is he was off beat, but i wouldn't know. anyhow, i want to know how do you follow the conductor while playing the piano or violin? it all seems confusing.
